    It's been a good long while since I reviewed some It's been a good long while since I reviewed some mezcal and I blame the mild weather we've had in the mid-Atlantic. I've been sipping away with a couple of bottles to make room for the new imports!

This ensamble was composed of papalote, zacatoro, and espadín along with 2 rare and wild agaves. Batch 0321JB and selected by @mrhitime.

N - Banana leaf, avocado oil, cocoa powder, tropical fruit waste (pits/peels/pith), with a touch of brine.

P - sweet fruity sip with a large dose of chili oil. Cabbage, asparagus, salted tomatoes. Sweet cream butter and hominy. 

F - "Clean" antisceptic quality. Pinewood. Dried fruit and coconut flakes. Mineral-rich water. Caramelized sweet onions.

A good batch that got better with lots of rest time. It's a wild composition but the sum of its parts kinda is better than the whole. I can't help it I just love the Zacatoro so much!
    Nearing the end of many 2021 bottle purchases and Nearing the end of many 2021 bottle purchases and comparing my tasting notes from that time frame. From first crack to bottle kill if you will.

This bottle in particular I felt that it had potential and I initially was disappointed with my purchase. The cost was higher at nearly every store! (has to be because they labeled it "Limited Edition" right?!)

I stashed away a flask for a rainy day and continued to drink and enjoy this whisky throughout 2022. 

I was presently surprised. The whisky's more tart and acrid fruit notes changed and developed into a more robust seasoned grilled steak and tropical fruity dram!

    For the first review of 2023 I'm dropping one of m For the first review of 2023 I'm dropping one of my favorite bottles released last year. An all ex-bourbon release of Springbank 12-Year cask strength. 

An anomaly compared to the previous batches that blend wine casks along with bourbon. A welcome release that gives you an opportunity to try Springbank at it's purest.

N - Musty, dry, botanical and floral malt composition. Pinewood and needles. Honeycrisp apples, raw sugar. Tea biscuits, shortbread, and oat cakes. 

P - Straightforward and simple. Olive oil peppery bite. Caramel, pie crust, and buttery toffee. Tart, bitter citric acid coated candies. A barrel char note that builds!

F - Hint of peat and much-needed salinity. Mineral water, slate, calcium. Tin and copper. Lanolin, twine, burlap. Bit of a barnyard-like finish and is quite unique. 

A delicious dram that is a great bottle to have on the shelf. Gives you the opportunity to compare with previous and future batches as a control element so to speak. Would love a touch more brine and salt personally, so pair a dram with some soft pretzels and cheese!

    Not the prettiest bottle shape on the shelf but th Not the prettiest bottle shape on the shelf but the presentation of John J. Bowman is quite lovely. Faux tax strip and a substantial cork. The back label showing through the bottle is a nice touch.
